Artisan Mana’eesh Za’atar & Olive Oil

There is something deeply comforting about mana’eesh fresh from the oven. The aroma of warm bread, fragrant za’atar and golden olive oil has long signalled the start of slow mornings and shared tables across Lebanon. Crisp at the edges, soft at the centre and designed to be torn, dipped and enjoyed together, these za’atar flatbreads celebrate the beauty of simple ingredients and the traditions that bring people together.

Serves 4–6 Flatbreads
Ingredients
  • 500g Type 00 Flour or high protein bread flour
  • 325ml Lukewarm Water
  • 7g Dried Yeast
  • 1 tsp Sea Salt & 1 tsp Honey
  • 2 tbsp Eid Pantry Lebanese Extra Virgin Olive Oil
  • 100g Eid Pantry Premium Dry Za’atar for topping
  • 150ml Eid Pantry Lebanese Extra Virgin Olive Oil
  • Labneh for dipping
  • Heirloom cherry tomatoes, Persian cucumbers and fresh mint sprigs
    1. In a large bowl (or stand mixer), whisk the lukewarm water, honey, and yeast. Let it sit for 5–10 minutes until foamy.
    2. Add the olive oil, then gradually stir in the flour and salt until a shaggy dough forms.
    3. Knead the dough for 8–10 minutes by hand (or 5 minutes on medium in a mixer) until it is smooth, elastic, and bounces back when poked. Place in a lightly oiled bowl, cover with a damp cloth and let it rise in a warm, draft-free spot for 1.5 to 2 hours, or until doubled in size.
    4. Preheat your oven to its highest setting (usually 240°C–260°C). If you have a pizza stone, place it in now.
    5. Divide the dough into 4–6 equal balls. On a floured surface, roll each into a circle about 1cm thick. Use your fingertips to press deep "dimples" into the surface of the dough. This creates little wells to hold the oil and prevents the bread from puffing up like a pita.
    6. In a small bowl, mix the za’atar and olive oil until it forms a loose, spreadable paste. Spread a generous tablespoon over each dough circle, leaving a 1cm border around the edge. Slide the mana’eesh onto the hot pizza stone (or a preheated baking tray).
    7. Bake for 8–10 minutes. You are looking for a golden-brown base and a slightly puffed, charred crust, while the za’atar topping should be fragrant and bubbling.
    8. Garnish with cherry tomatoes, Persian cucumbers and fresh mint sprigs.
