Ghee-Roasted Bananas with Cardamom Labneh & Honeycomb

Some desserts are less about indulgence and more about simple pleasures. Creamy labneh, warm caramelised bananas and fragrant cardamom come together in a dish that feels both comforting and refined. Finished with golden honeycomb, pistachios and a drizzle of rich ghee, it celebrates the ingredients that have long sweetened tables across the Levant... proof that the most memorable desserts are often the simplest.

Ingredients
  • 250g Full-Fat Greek Yogurt or Labneh
  • 1/2 tsp Ground Cardamom
  • 1 tsp Honey
  • Pinch of Salt
  • 2 Firm-Ripe Bananas, sliced lengthways
  • 2 tbsp Eid Pantry Grass Fed Ghee
  • 1 tbsp Maple Syrup
  • Cinnamon for dusting
  • 1 Piece of Fresh Honeycomb for garnishing
  • 1 tbsp Green Pistachios
    1. If making from scratch, strain Greek yogurt through cheesecloth for 6–12 hours until thick and spreadable.
    2. In a small bowl, whisk the labneh with cardamom, honey, and salt until smooth. Keep chilled until the moment of serving.
    3. Heat the ghee in a heavy-based skillet over medium-high heat.
    4. Place the bananas cut-side down. Sear for 3 minutes without moving them to develop a deep, amber crust.
    5. Drizzle the maple syrup and cinnamon over the bananas, then gently flip. Baste the bananas with the bubbling syrup-ghee mixture for 1 more minute until they are glossy and soft. Remove from heat.
    6. Place a jagged shard of honeycomb directly onto the warm banana so it begins to weep slightly into the labneh. Scatter the vibrant green pistachios and rose petals over the top.
    7. Drizzle any remaining golden ghee from the pan over the white labneh.
