Riz Bi Haleeb Rose & Blossom Infused Rice

Few desserts are as comforting and nostalgic as rice pudding. Found throughout the Levant in countless family kitchens, this delicate version is infused with fragrant rose water and orange blossom, transforming humble ingredients into something quietly elegant. Silky, creamy and finished with pistachios and rose petals, it is a dessert that speaks of hospitality, celebration and the enduring beauty of simple traditions.

Ingredients
  • 1/2 cup Short Grain Rice, rinsed.
  • 1 cup Filtered Water
  • 1 Litre (4 cups) Full Cream Milk.
  • 1/2 cup Caster Sugar
  • 1 tbsp Eid Pantry Rose Water
  • 1 tsp Eid Pantry Orange Blossom Water
  • 2 tbsp Pistachio
  • 1 tsp Dried Organic Rose Petals
    1. In a heavy-based saucepan (stainless steel or white enamel looks best for photography), combine the rinsed rice and water.
    2. Simmer over medium-low heat until the water is completely absorbed and the rice is par-cooked.
    3. Pour in the milk and bring to a very gentle boil, stirring constantly with a silicone spatula or wooden spoon. Never leave the pot unattended, the milk must be stirred to prevent a skin forming or the bottom catching.
    4. Lower the heat and simmer for 20–25 minutes, stirring frequently. The rice will release its natural starches, turning the milk into a thick, glossy cream. You’ll know it’s ready when the mixture coats the back of a spoon and holds a "path" when you run your finger through it.
    5. Stir in the sugar and simmer for another 5 minutes until fully dissolved. Remove from the heat and immediately stir in the rose water (and orange blossom water). Adding these at the end preserves their volatile floral oils.
    6. Pour the hot pudding into small, minimalist serving bowls or glass ramekins. Let them cool to room temperature, then refrigerate for at least 3 hours to set into a firm yet creamy velvet.
