Za’atar-Infused Fried Eggs with Garlic Yogurt

Some of the most memorable meals begin with the simplest ingredients. Creamy yogurt, golden eggs, fragrant olive oil and za’atar come together in a dish that feels both comforting and elevated. Rich, vibrant and designed for sharing, each spoonful is layered with warmth, spice and freshness... an invitation to slow down, gather around the table and savour the beauty of everyday ingredients.

Ingredients
  • 1 cup Full-Fat Greek Yogurt (Strain it for 30 minutes if you prefer a thicker, labneh-like texture).
  • 1 clove Garlic, grated into a fine paste.
  • 1 tbsp Lemon Juice & Zest
  • Pinch of Sea Salt.
  • 4 Free Range Eggs
  • 3–6 tbsp Eid Pantry Extra Virgin Olive Oil
  • 1 tbsp Eid Pantry Pre Mix Za’atar
  • Handful of Fresh Herbs
  • 1 tbsp Hot Chilli Oil
  • Warm Mana’eesh or Sourdough for dipping.
    1. In a small bowl, whisk the Greek yogurt, grated garlic, lemon juice, zest and salt until light and aerated.
    2. Spread the mixture across a wide, shallow serving plate. Use the back of a spoon to create deep "swirls" and craters, this is where the herb and chilli oils will eventually pool.
    3. Heat the olive oil in a heavy based non stick skillet over medium to high heat.
    4. Once the oil is shimmering, mix the za’atar directly into the oil. Let it "bloom" for about 30 seconds until it smells toasted and fragrant.
    5. Carefully crack the eggs into the hot, herb infused oil. Use a spoon to continuously baste the egg whites with the hot oil (avoiding the yolks).
    6. Cook until the edges are golden, but the yolks remain soft and jammy. Slide the eggs gently from the pan onto the bed of yogurt. Pour the remaining za’atar speckled oil from the skillet over the eggs and yogurt.
    7. Drizzle the hot chili oil in a deliberate, artistic spiral. Scatter the parsley and dill generously over the top.
