The Signature Fattoush Vinaigrette

A great dressing does more than season a salad—it brings every ingredient together. This vibrant blend of pomegranate molasses, sumac and Lebanese olive oil captures the essence of Levantine flavour: bright, tangy, aromatic and beautifully balanced. Simple to prepare yet rich in character, it is a versatile staple that adds depth, colour and a touch of tradition to everything it touches.

Ingredients
  • 1/3 cup Eid Pantry Lebanese Extra Virgin Olive Oil
  • 2 tbsp Eid Pantry Pomegranate Molasses
  • 1 tbsp Eid Pantry Ground Sumac
  • 1 clove Garlic, crushed and seasoned with salt
  • 1 tbsp Freshly Squeezed Lemon Juice
  • 1/2 tsp Dried Mint (optional)
  • Fine Sea Salt & Cracked Black Pepper
    1. In a small glass jar or a minimalist ceramic bowl, combine the pomegranate molasses, lemon juice, crushed garlic.and sumac.
    1. Whisk thoroughly until the garlic and molasses are fully integrated. While whisking constantly, slowly drizzle in the extra virgin olive oil. This "slow-drop" method creates a stable emulsion, resulting in a dressing that is thick, glossy, and clings perfectly to the leaves rather than pooling at the bottom of the bowl.
    1. Season with salt and pepper. Let the dressing sit for at least 10 minutes before using. This allows the sumac to "bloom" and soften, bleeding its vibrant burgundy color into the oil.
