Summer Berry & Rose Maceration with Velvet Labneh

Sometimes the most beautiful desserts are those that allow nature’s ingredients to speak for themselves. Sweet seasonal berries are gently enhanced with fragrant rose water and honey, creating a dish that feels light, fresh and effortlessly elegant. Paired with creamy labneh and finished with pistachios or rose petals, it is a simple celebration of colour, fragrance and the delicate flavours that have long graced Levantine tables.

Ingredients
  • 3 cups Seasonal Berries: A mix of Strawberries, Raspberries, and Blueberries. Ensure they are at room temperature for maximum juice release.
  • 1 tbsp Organic Honey.
  • 1 tsp Fresh Lemon Juice
  • 1 tsp Eid Pantry Traditional Rose Water
  • 1/2 cup Thick Greek Yogurt or Labneh
  • A few crushed pistachios or a dusting of dried rose petals for garnishing (optional)
    1. Wash the berries gently and pat them bone-dry. Slice the strawberries into elegant, irregular wedges
    2. In a small minimalist glass bowl, whisk together the honey, lemon juice and rose water until the honey is fully dissolved into a clear, floral syrup.
    3. Place the berries in a shallow ceramic bowl and pour the rose nectar over them. Toss gently to avoid bruising the raspberries. Let the fruit sit at room temperature for 15 minutes. You will see the berries begin to glisten as the rose water draws out their natural, ruby-red juices.
    4. Just before serving, place a generous, purposeful dollop of the chilled Labneh off-center on a fresh plate or in the bowl.
